I have to say, I feel very blessed to live somewhere with as wonderful of a vegan community as Tacoma. Not only are vegan options everywhere you turn, the vegan community itself is very supportive, open, and friendly.
One of the things that the Tacoma Vegans (or South Sound Vegans) regularly do as a group is get together for potlucks, because what kind of vegan doesn’t love a potluck?! Lately the themes have been recipes from different blogs or cookbooks. Our most recent potluck featured all recipes from Jackie Sobon’s blog, Vegan Yack Attack. If you are in search of some seriously tasty vegan recipes, Vegan Yack Attack is a must for you! One of my favorite recipes from her blog is her Chili Fiesta Mac ‘n’ Cheese. I served that at my New Year’s Eve party last year, and OH. MY. GOD. Not only is it amazingly delicious, it’s also super easy!
For this recent potluck, I made the Southwestern Kale Salad with the chipotle tahini dressing. This was a beautiful salad with a kick! Other recipes that were featured were Cauliflower Mac, Summer Corn Salad with Basil Pesto Aioli, Veggie Frittata Bites, Quick and Easy Vegan Chili, Buffalo Jackfruit Spinach Dip, Curried Chickpea and Carrot Salad, Chocolate Cupcakes with Peanut Butter Cream Cheese Frosting, and more!
One of my favorite things about these potlucks is the sheer amount of people, often strangers who have never met, that come together to celebrate and share the food that we eat. I anticipate potlucks and other similar community gatherings to be a regular occurrence at Cupid’s Landing. The love, the support, and the community vibe all encase what Cupid’s Landing is really all about.
