Ingredients
  1. 1.5 cups dry lentils optionally soaked for 2 hours (helps with cooking time and water absorption)
  2. 4 red potatoes cut into 1" cubes
  3. 1/2 medium yellow onion chopped
  4. 3 celery stalks chopped
  5. 2 medium carrots chopped
  6. 3 medium tomatoes choppped
  7. 2 garlic cloves pressed or minced
  8. 6 cups vegetable broth
  9. 1/2 tsp dried oregano
  10. 1/2 tsp dried basil
  11. leaves from 1 bunch Swiss chard torn into bite sized pieces
  12. 1.5 cups fresh or frozen peas
  13. 1 cup chopped fresh parsley
  14. 1 TBS soy sauce
Instructions
  1. Add all ingredients from lentils to basil to a large pot. Bring to a boil, cover and simmer for 20 minutes.
  2. Add the rest of the ingredients plus 2 cups of hot water. Bring back to a boil, reduce heat to medium, cover and cook for ten more minutes or until macaroni is al dente. It’s best not to overcook the pasta as it will soften in residual heat
